Baingan Bharta Ahumado
What does it include?
Ingredients
- 1 large eggplant
- ½ cup chopped onion
- 240 ml chopped tomatoes
- 6 cloves of garlic, minced
- 1 chopped green chili
- ¼ teaspoon red chili powder
- 1.75 ml of oil
- 15 ml chopped coriander leaves
- Salt to taste
How to prepare it step by step?
Preparation
- Wash the eggplant and dry it with a kitchen towel.
- Apply a little oil all over the eggplant.
- Roast the eggplant over an open flame or in the oven until tender, turning every 2-3 minutes for even cooking.
- Optional: Embed a few cloves of garlic in the eggplant before roasting to intensify the flavor.
- Check cooking with a knife; it should slide easily.
- Immerse the roasted eggplant in water to cool it slightly.
- Optional: infuse smoky flavor with hot charcoal (dhungar technique) by placing a piece of smoldering charcoal on the plate with the eggplant and a few drops of oil, cover and let it infuse for 1-2 minutes.
- Peel the skin of the eggplant and chop or mash the pulp.
- Heat oil in a pan or kadai and add chopped onion and garlic.
- Sauté until the onion is transparent.
- Add the chopped green chili and sauté for a minute.
- Add the chopped tomatoes and mix well.
- Sauté until the oil begins to separate from the mixture.
- Add the red chili powder and mix.
- Add the cooked eggplant and mix completely with the onion and tomato masala.
- Season with salt and sauté for 4-5 more minutes.
- Add the coriander leaves to decorate and serve.
