- 30 ml vegetable oil
- 30 ml lard
- 4 cloves minced garlic
- 1 medium onion chopped
- 2 guajillo chiles, deveined and seeded
- 2 pasilla chiles, deveined and seeded
- 1/10 ml cumin powder
- 1/10 ml dried oregano
- 5 ml sal
- 5 ml ground black pepper
- 1/2 liter water
- 1/2 liter chicken broth
- Hot corn tortillas
- 1 red onion in strips
- fresh cilantro
- Lemons cut into wedges
How to prepare it step by step?

- Heat the oil and lard in a large pot over medium-high heat. Add the pork or beef, cooking until evenly browned. Remove and set aside.
- In the same pot, add the garlic and onion, cooking until translucent. Stir in the guajillo and pasilla chiles, cooking for a few more minutes until fragrant.
- Add the cumin, oregano, salt, black pepper, water, and chicken broth. Lower the heat to low and simmer for 2 to 3 hours, or until the meat is tender and the flavors meld.
- Remove the meat, shred it with a fork, and return it to the pot. Cook for an additional 30 minutes to allow the flavors to blend.
- Serve the birria hot with corn tortillas, red onion, cilantro, and lemon wedges.
