  • 15 ml Worcestershire sauce

Preparation

  1. Boil water in a large saucepan. Add 250 ml of cold water and the udon noodles. Cook fresh or frozen noodles for 2 minutes or until al dente. If they are dry, cook between 5 and 6 minutes. Drain and leave in a strainer.
  2. Heat 1 tablespoon sesame seed oil in a frying pan. Add the sliced onion and cabbage. Sauté for 3-4 minutes until softened.
  3. Add the shiitake mushrooms and scallions. Sauté for 1 more minute.
  4. Add the remaining sesame oil and udon noodles. Heat the cold noodles before adding the sauce if necessary. Continue sautéing until they are sticky and heated through.
  5. In a small cup, mix the soy sauce, mirin, powdered sugar, and Worcestershire sauce. Add to hot sesame oil. Heat over low heat until it becomes transparent.
  6. Drain the udon noodles in the hot sesame seed oil. Add 2 tablespoons sesame seed oil and the remaining scallions. Sauté for 1-2 minutes until heated through.
