Preparation

  1. Place the whole almonds in a bowl and cover them with boiling water to loosen the skin. Let it rest for 5 minutes, drain and dry.
  2. Preheat the oven to 180°C and line a 20cm deep tin with baking paper.
  3. Beat the butter with the muscovado sugar until creamy and fluffy.
  4. Add the eggs one by one, beating well after each addition.
  5. Incorporate the orange zest, ground almonds, and apricot jam, mixing until combined.
  6. Sift the flour with the baking powder and gently fold into the mixture.
  7. Pour in the milk and mix until homogeneous.
  8. Add the dried fruits and glazed cherries, distributing them evenly.
  9. Pour the mixture into the mold and smooth the surface.
  10. Arrange the whole almonds in a decorative circle on the surface.
  11. Bake for 1 hour 15 minutes to 1 hour 30 minutes, or until a toothpick inserted comes out clean.
  12. Cool inside the mold for 15 minutes before removing and cooling completely.
  13. Brush with milk and sprinkle with icing sugar before serving.
