- 2 tbsp vegetable oil (30 ml)
- 1 red onion, sliced (100 g)
- 2 cloves of garlic, sliced (10 g)
- 1 red chili sliced
- 250 g raw prawns
- 140 g cooked brown rice
- 75 g frozen peas
- 1 tsp soy sauce (15 ml)
- 1 tsp fish sauce (15 ml)
- 10 g fresh cilantro, chopped
- 4 large eggs
- Spicy sauce to taste to serve

- Heat 1 tablespoon oil in a wok or large skillet over medium-high heat.
- Add the onion, garlic, and chilli, sautéing for 2–3 minutes until aromatic and the onion turns translucent.
- Add the prawns and cook for 1–2 minutes until they turn pink and are just cooked through.
- Add the brown rice and peas, stirring constantly until heated through and the peas are tender.
- Add the soy sauce and fish sauce, mixing well to coat the rice evenly.
- Add the chopped cilantro and stir gently to distribute the herb throughout the dish.
- In another pan, heat the remaining tablespoon of oil and fry the eggs to taste, seasoning with salt and pepper.
- Divide the fried rice among 4 bowls and place a fried egg on each serving.
- Serve hot with hot sauce to taste.
