Spiced Haddock Kedgeree

- 50g butter
- 1 medium onion chopped
- 3 cardamom pods
- 1/20 ml of turmeric
- 1 small cinnamon stick
- 2 fresh bay leaves
- 450 g basmati rice
- 1 liter of chicken broth
- 750 g of haddock
- 3 eggs
- 45 ml chopped fresh parsley
- 1 lemon in wedges
- Salt and pepper to taste
How to prepare it step by step?
Preparation
- Melt butter in a large saucepan over medium heat. Add the chopped onion and cook until soft but not browning.
- Add the cardamom pods, turmeric, cinnamon, and bay leaves, cooking for a minute until the aromas are released.
- Add the basmati rice, mixing well to coat it with the butter and spices. Pour in the chicken broth, add salt to taste, and bring to a boil. Cover with lid, reduce heat to low, and cook gently for 12 minutes until the rice is tender.
- While the rice is cooking, place the haddock in a saucepan of simmering water for 4 minutes. Remove and let cool enough to handle.
- Cook eggs in boiling water for 8 minutes until hard-boiled. Cool them, peel them, and chop them.
