- 2 cloves of garlic
- 1 onion
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 bay leaf
- 1 tablespoon oil
- Salt, pepper
- Corn tortillas, chopped onion and cilantro to serve

- Cut the meat into large pieces, season with salt and pepper.
- Heat oil in a pot or deep frying pan and brown the meat for 3-4 minutes per side until golden.
- Chop onion and garlic, add to the meat and sauté for 3-4 minutes until fragrant.
- Add cumin, oregano, and bay leaf. Mix well to coat the meat.
- Add enough water to partially cover the meat and cook, covered, over very low heat for 2 hours until the meat is tender and falling apart.
- Remove the meat and shred with forks. Place in a pan and brown for 5-6 minutes until crispy on the outside.
- Assemble the tacos: Heat the corn tortillas and fill them with the crispy carnitas. Serve with chopped onion, fresh cilantro, and sauce to taste.
