What does it include?

Ingredients

  • 500 g of 000 flour
  • 10 g of salt
  • 60g sugar
  • 20 g fresh yeast
  • 300 ml cold milk
  • 300 g cold butter (for puff pastry)
  • 1 egg to brush

How to prepare it step by step?

Preparation

  1. Mix flour, salt, sugar and crumbled yeast.
  2. Add the cold milk and knead until you obtain a smooth and elastic dough.
  3. Form a rectangle, cover and place in the refrigerator for 1 hour so the dough can rest.
  4. Place the cold butter between two pieces of paper and beat until it forms a flat, homogeneous square.
  5. Stretch the dough into a rectangular shape and place the butter in the center, leaving a 1 cm margin around it.
  6. Close like an envelope, sealing the edges well to prevent the butter from escaping.
  7. Stretch the dough into a 30x40 cm rectangle and make the first simple turn (fold in 3 parts).
  8. Refrigerate for 30 minutes and repeat two more simple turns, making sure the dough is very cold.
  9. Roll out the dough thin to a thickness of 5 mm and cut equal triangles.
  10. Roll each triangle from the base to the tip, forming a soft spiral.
  11. Place on a plate and let rise for 1 hour until they double in size.
  12. Brush with beaten egg and bake for 18–20 minutes at 200°C, until golden and crispy.
