  • 142 ml single cream
  • 25 g powdered sugar
  • 100g dark chocolate
  • 25g butter

  • 50 g powdered sugar
  • 175 g dark chocolate
  • 2 tablespoons double cream
  • 4 egg yolks
  • 5 egg white
  • 2 tablespoons double cream
  • to serve icing sugar

How to prepare it step by step?

Preparation

  1. Heat the oven to 220C/fan 200C/gas 7 and place a baking tray on the top shelf.
  2. For the sauce, heat the cream and sugar until boiling. Remove from the heat, stir in the chocolate and butter until melted and then keep warm.
  3. Grease 6 150ml ramekins with melted butter, sprinkle with 2 tbsp caster sugar then tap off the excess.
  4. Melt the chocolate and cream in a bowl over a saucepan of boiling water, cool and then mix with the egg yolks.
  5. Beat the egg whites until they hold their shape, then add the sugar, 1 tablespoon at a time, beating until stiff peaks form.
  6. Fold a tablespoon of egg whites into the chocolate mixture to lighten it, then gently fold in the remaining whites.
  7. Working quickly, fill the molds, wipe the edges, and run your thumb along the edges.
  8. Lower the oven to 200C/electric 180C/gas 6, place the molds on the baking tray, then bake for 8-10 minutes until they rise with a slight jiggle. Do not open the oven door too soon as this could cause them to collapse.
  9. Once the soufflés are ready, sprinkle with icing sugar, make a small hole in the top and then pour in some hot chocolate sauce.
  10. Serve immediately.
