  • 250 g plain flour
  • 135g butter
  • 400 g of almíbar dorado
  • 150 g breadcrumbs
  • Zest of 2 lemons
  • 1 beaten egg

How to prepare it step by step?

Preparation

  1. Mix the flour with the butter in a large bowl until it resembles fine breadcrumbs.
  2. Add three tablespoons of cold water and mix well to obtain a firm dough.
  3. Preheat the oven to 200C/400F/Gas 6 and place a heavy tray in the oven to warm.
  4. Grease an 18cm deep fluted flan mold with butter.
  5. Reserve about 150g of dough from the main ball for the top of the lattice.
  6. Spread the rest of the dough on a lightly floured surface and form the prepared flan mold with the dough.
  7. Prick the base with a fork to prevent it from rising during baking.
  8. Roll out the reserved dough thinly on cling film for the lattice top.
  9. Brush the dough with egg and set aside to cool in the refrigerator (the plastic wrap makes it easier to move).
  10. Gently heat the golden syrup in a large pot over medium heat.
  11. Add two tablespoons of flour and mix well to form a thick paste.
  12. Combine the thick paste with the reserved dough, mixing until smooth.
