- 250 g plain flour
- 135g butter
- 400 g of almíbar dorado
- 150 g breadcrumbs
- Zest of 2 lemons
- 1 beaten egg
How to prepare it step by step?
Preparation
- Mix the flour with the butter in a large bowl until it resembles fine breadcrumbs.
- Add three tablespoons of cold water and mix well to obtain a firm dough.
- Preheat the oven to 200C/400F/Gas 6 and place a heavy tray in the oven to warm.
- Grease an 18cm deep fluted flan mold with butter.
- Reserve about 150g of dough from the main ball for the top of the lattice.
- Spread the rest of the dough on a lightly floured surface and form the prepared flan mold with the dough.
- Prick the base with a fork to prevent it from rising during baking.
- Roll out the reserved dough thinly on cling film for the lattice top.
- Brush the dough with egg and set aside to cool in the refrigerator (the plastic wrap makes it easier to move).
- Gently heat the golden syrup in a large pot over medium heat.
- Add two tablespoons of flour and mix well to form a thick paste.
- Combine the thick paste with the reserved dough, mixing until smooth.
