- Start by heating olive oil in a large paella pan over medium heat. Fry the chicken and rabbit until golden brown, about 8-10 minutes, ensuring a rich flavor base.
- Add the green beans and garrofón, sautéing for 3-4 minutes until slightly softened.
- Incorporate the crushed tomato and rosemary, cooking until the tomato loses its acidity and the mixture becomes fragrant, about 5 minutes.
- Add the rice, stirring to coat each grain lightly with the mixture, ensuring even flavor distribution.
- Pour in the hot broth and saffron, stirring once to distribute the ingredients evenly.
- Cook over medium heat for about 20 minutes, until the rice absorbs most of the liquid. Then reduce to low heat for another 10 minutes, allowing the rice to finish cooking and develop a slight crust at the bottom.
- Remove from heat and let rest for 5 minutes before serving, allowing the flavors to meld beautifully.
