  1. Heat a large paella pan over medium-high heat and add a generous splash of olive oil.
  2. Sear the chicken and rabbit pieces for 5-6 minutes on each side until they acquire an even golden color. Remove and reserve on a plate.
  3. Chop the red pepper into thin strips and the green beans into pieces of approximately 3 cm.
  4. Sauté the vegetables in the paella pan for 3-4 minutes until they are slightly tender but with a crispy texture.
  5. Grate the tomato and add it to the paella pan, cooking over medium heat for 5 minutes until it reduces and concentrates its flavors.
  6. Add the rice and mix with the meats and vegetables, ensuring all grains are impregnated with the sauce's flavors.
  7. Add the hot broth with the saffron, adjust the salt, and distribute the rice evenly in the paella pan. Cook over medium heat without stirring for 18-20 minutes to allow the socarrat to form.
  8. Remove from heat and let sit for 5 minutes before serving so the flavors can settle. Garnish with pepper strips and fresh herbs if desired.
