- 1 kg of potatoes
- 50 g perilla butter
- splash of milk
- 50 g of Gruyère
- 75g butter
- 2 leeks sliced
- 75 g plain flour
- 150 ml white wine
- 568 ml milk
- 30 ml chopped parsley
- 250g salmon
- 250 g of haddock
- 250g smoked haddock
How to prepare it step by step?
Preparation
- Preheat the oven to 200°C/400°F/Gas 6 (fan 180°C).
- Place the potatoes in a saucepan with cold water and salt. Bring to a boil and simmer until tender. Drain well and blend with the butter and a splash of milk. Season with pepper and taste for seasoning, adding salt if necessary.
- For the fish filling, melt the butter in a saucepan, add the leeks and cook over low heat. Cover and cook for 10 minutes until soft. Measure the flour into a small bowl, add the wine and whisk until smooth.
- Add the milk to the leeks, bring to a boil and then stir in the wine mixture. Stir until thickened, season and add the parsley and fish, stirring for two minutes. Pour into an oven-safe saucepan and spread the Gruyère cheese on top. Let cool until firm.
