  • 75g butter
  • 2 leeks sliced
  • 75 g plain flour
  • 150 ml white wine
  • 568 ml milk
  • 30 ml chopped parsley
  • 250g salmon
  • 250 g of haddock
  • 250g smoked haddock

How to prepare it step by step?

Preparation

  1. Preheat the oven to 200°C/400°F/Gas 6 (fan 180°C).
  2. Place the potatoes in a saucepan with cold water and salt. Bring to a boil and simmer until tender. Drain well and blend with the butter and a splash of milk. Season with pepper and taste for seasoning, adding salt if necessary.
  3. For the fish filling, melt the butter in a saucepan, add the leeks and cook over low heat. Cover and cook for 10 minutes until soft. Measure the flour into a small bowl, add the wine and whisk until smooth.
  4. Add the milk to the leeks, bring to a boil and then stir in the wine mixture. Stir until thickened, season and add the parsley and fish, stirring for two minutes. Pour into an oven-safe saucepan and spread the Gruyère cheese on top. Let cool until firm.
