  • 50 ml warm milk
  • 60 g icing sugar
  • Toasted sesame (for the filling)
  • 1 tablespoon butter (for the filling)
  • 300 g date paste
  • Water (only if necessary to soften the pasta)

How to prepare it step by step?

Preparation

  1. Beat the butter with the icing sugar until you achieve a creamy, smooth mixture.
  2. Gradually incorporate the flour, semolina, and sunflower oil, mixing until just combined. Slowly add the warm milk, blending until the dough comes together without over-kneading.
  3. Cover the dough and let it rest for 1 hour to allow the flavors to meld.
  4. For the filling, lightly toast the sesame seeds in a pan until they release their nutty aroma, then mix with the butter and date paste. Add a splash of water if necessary to achieve a soft, spreadable consistency.
  5. Remove from heat, let cool slightly, and form 15 g balls. Refrigerate for 30 minutes to firm up.
  6. Shape 30 g dough balls and place a ball of date filling in the center of each.
  7. Press each filled dough ball into a mamoul mold to shape it, ensuring the filling is well enclosed.
  8. Bake in a preheated oven at 180°C for 20 minutes, until the cookies are golden on the bottom and just lightly colored on top.
