  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 stems of cilantro, chopped
  • 5 ml grated fresh ginger
  • 1 can of 400 grams of coconut milk
  • 45 ml green curry paste
  • 30 ml brown sugar
  • 5 ml of salt
  • 5 ml Thai chili paste (optional)
  • 1 lime, sliced
  • Fresh cilantro and chopped green onion to serve

  1. Heat the oil in a large saucepan over medium-high heat. Add the lamb and cook until golden brown on all sides, about 5-7 minutes. Remove and reserve.

  3. Stir in the cilantro, ginger, green curry paste, coconut milk, brown sugar, salt, and chili paste (if using). Mix well until combined.
  4. Return the lamb to the saucepan and lower the heat to medium. Simmer for 1 hour and 30 minutes, or until the lamb is tender and the sauce has thickened. Stir occasionally to prevent sticking.
