- 150 g peeled shrimp
- 100 g firm tofu

- 30 g bean sprouts

- Vegetable oil

- Soak the rice noodles in hot water for 10-15 minutes until soft; drain and reserve.
- Cut the tofu into cubes and sauté in a wok with a little oil until golden; remove and reserve.
- In the same wok, add a little more oil and sauté the chopped onion, garlic, and grated carrot for 2-3 minutes until fragrant.
- Add the shrimp and cook until they turn pink, about 2 minutes.
- Push the ingredients to one side of the wok and pour in the beaten eggs; stir until just set.
- Add the drained noodles, the reserved tofu, and the sauces (tamarind, soy, and brown sugar); mix well for 2-3 minutes over medium-high heat until the noodles are well coated.
- Add the bean sprouts and sauté for 1 more minute until tender.
- Serve hot, sprinkled with roasted peanuts, fresh cilantro, and a squeeze of lime juice for a refreshing finish.
