  • 150 g peeled shrimp
  • 100 g firm tofu
  • 2 eggs
  • 1 carrot
  • 1 onion
  • 1 clove of garlic
  • 2 tablespoons tamarind sauce
  • 1 tablespoon brown sugar
  • 2 tablespoons soy sauce
  • 30 g bean sprouts
  • chopped roasted peanuts
  • Vegetable oil
  • Fresh cilantro and lime to serve

How to prepare it step by step?

Preparation

  1. Soak the rice noodles in hot water for 10-15 minutes until soft; drain and reserve.
  2. Cut the tofu into cubes and sauté in a wok with a little oil until golden; remove and reserve.
  3. In the same wok, add a little more oil and sauté the chopped onion, garlic, and grated carrot for 2-3 minutes until fragrant.
  4. Add the shrimp and cook until they turn pink, about 2 minutes.
  5. Push the ingredients to one side of the wok and pour in the beaten eggs; stir until just set.
  6. Add the drained noodles, the reserved tofu, and the sauces (tamarind, soy, and brown sugar); mix well for 2-3 minutes over medium-high heat until the noodles are well coated.
  7. Add the bean sprouts and sauté for 1 more minute until tender.
  8. Serve hot, sprinkled with roasted peanuts, fresh cilantro, and a squeeze of lime juice for a refreshing finish.
