What does it include?

  • 375 g puff pastry
  • 30 ml plain flour
  • 30 ml icing sugar
  • 250 g powdered sugar
  • 2 strips of lemon zest
  • 1 bunch of cinnamon
  • 2 whole eggs
  • 4 egg yolks
  • 50 g corn flour
  • 500 ml whole milk
  • With Vaina de Vain

How to prepare it step by step?

Preparation

  1. Sprinkle the work surface with flour and icing sugar.
  2. Stretch the puff pastry into a 45 x 30 cm rectangle.
  3. Roll the dough lengthwise creating a cylinder and cut into equal portions.
  4. Preheat the oven to 200°C (180°C fan-assisted).
  5. Line the molds with the dough portions and press gently.
  6. In a bowl, mix the milk with the vanilla bean, cinnamon, lemon zest, eggs and corn flour until you obtain a homogeneous mixture.
  7. Pour the custard mixture into each tartlet until it fills 3/4 of the mold.
  8. Bake for 20-25 minutes until the top is golden brown and the custard is set. Look for a bright golden color and a firm texture to the touch.
  9. Let cool before unmolding and serving.
