  • 2 pork tenderloins, 1 kg each
  • 200 ml white wine
  • 1/2 teaspoon paprika
  • 2 lemons
  • 1/2 lemon juice
  • A pinch of olive oil
  • Mayonnaise to serve
  • 1 kilo of potatoes
  • Vegetable oil for frying

How to prepare it step by step?

Preparation

  1. Cut the tenderloins into 5 equal-sized pieces, leaving the tail tips longer.
  2. Place each piece in a plastic bag and gently flatten them to the size of a side plate.
  3. In a bowl, combine the wine, paprika, salt, pepper, and the juice of ½ lemon. Add the pork and let marinate for 20-30 minutes.
  4. Meanwhile, prepare the potatoes. Fill a container with cold water and cut the potatoes into 3 cm sticks. Soak them for 5 minutes, change the water, and let it sit for another 5 minutes. Drain and dry them well.
  5. Heat the oil to 130°C and blanch the potatoes for 8-10 minutes. Drain and cool them. Heat the oil again to 180°C and fry the potatoes for another 2-3 minutes until golden and crispy. Drain and season with sea salt.
  6. Cook the pork pieces in 2 batches on the barbecue. Rub them with oil and cook 1 minute on each side. Remove and stack them.
  7. Serve by stacking the fries, place the pork on top, and pour the juice from the plate. Finish with mayonnaise and a lemon wedge.
