- 800 g clean pork cheeks
- 2 tablespoons white miso
- 2 tablespoons soy sauce
- 2 tablespoons mirin or white wine
- 1 piece of grated fresh ginger (2 cm)
- 2 tablespoons honey or brown sugar
- 500 ml of broth
- Oil, salt and pepper
- Chives to decorate
How to prepare it step by step?
Preparation
- Season the cheeks with salt and pepper. In a large pot with 1 tablespoon of oil, sear the cheeks over high heat for 2-3 minutes on each side until golden. Remove and reserve.
- In the same pot, add 1/2 chopped onion (optional) and sauté for 3-4 minutes until translucent. Add grated ginger and sauté for 1 more minute, releasing its fragrant aroma.
- Mix the miso, soy sauce, mirin, and honey in a bowl until well incorporated.
- Return the cheeks to the pot, pour the miso mixture over them, and add the broth until they are partially covered.
- Bring to a boil, then lower the heat and simmer over very low heat, covered, for 2-2.5 hours until the meat is tender and falling off the bone.
- Remove the cheeks and reduce the sauce over high heat for 8-10 minutes until it thickens into a glossy glaze.
- Add the cheeks back to the sauce, ensuring they are well varnished on all sides. For a more caramelized finish, finish in the oven at 200°C for 6-8 minutes or brown in a pan.
- Serve the cheeks with white rice or sweet potato puree, sprinkled with freshly chopped chives.
