Mediterranean Seafood Bouillabaisse

Ingredients
- 30 ml olive oil
- 2 cloves minced garlic
- 1 medium onion chopped
- 1 red pepper cut into cubes
- 4 ripe tomatoes, peeled and chopped
- 5 ml sweet paprika
- 1 liter fish stock
- 1/10 ml ground saffron
- 5 ml chopped fresh parsley
- 4 medium prawns
- 4 hake loins
- 4 large shrimp
- 8 mussels
- Toasted bread to accompany
How to prepare it step by step?
Preparation
- Heat the olive oil in a large pot over medium heat. Add the garlic and onion, cooking until translucent.
- Add the red pepper and cook for a few minutes. Next, add the tomatoes and paprika, and let the mixture cook until the tomatoes break down.
- Pour the fish stock into the pot, add the saffron and cook over low heat for 20 minutes.
- Add the seafood to the pot, cooking until the fish are cooked and the seafood is open and tender, about 10 minutes more.
- Sprinkle with fresh parsley before serving. Serve the bouillabaisse hot with toasted bread.

Bouillabaisse is a traditional fish dish from French Provence, especially Marseille. This Mediterranean version includes a variety of seafood and fish, cooked in a rich sauce of garlic, onion and paprika, enriched with the characteristic touch of fish fumet.
