Lamb Stew Tagine with Vegetables

Ingredients
- 1 kg lamb in pieces
- 2 large onions, chopped
- 4 cloves garlic, minced
- 2 carrots, sliced
- 1 red pepper, cubed
- 1 green pepper, cubed
- 400 g frozen peas
- 4 medium tomatoes, chopped
- 30 ml meat concentrate
- 45 ml olive oil
- 10 ml cumin
- 5 ml coriander powder
- 5 ml cinnamon powder
- 5 ml sweet paprika
- Salt and pepper to taste
- 1 sprig of rosemary
- 1 lemon, cut into wedges
How to prepare it step by step?
Preparation
- Heat the olive oil in a large pot over medium heat. Add the onions and sauté until translucent, about 5 minutes.
- Add the garlic, cumin, cinnamon, and sweet paprika, cooking for 2 minutes until fragrant.
- Add the lamb pieces and cook until golden brown on all sides, approximately 8 minutes.
- Add the tomatoes, carrots, peppers, meat concentrate, coriander powder, salt, and pepper. Stir to combine.
- Pour water to approximately cover the ingredients, add the rosemary sprig, and bring to a boil. Reduce heat, cover, and simmer for 1 hour and 10 minutes.
- During the last 20 minutes of cooking, add the peas and lemon wedges. Continue to cook until the vegetables are tender and the lamb is very tender.
- Remove the rosemary sprig and serve hot, ideally in traditional tagines.
