- 500 grams of beef cut into strips
- 1 small pumpkin, cubed
- 2 carrots peeled and sliced
- 250 grams of dried shiitake, hydrated and cut
- 100 grams of firm tofu, cubed
- 1 medium onion chopped
- 250 grams of cooked Japanese rice
- 30 ml soy sauce
- 15 ml of sake
- 45 ml curry powder
- 30 ml vegetable oil
- 600 ml beef broth or water
- 1 chopped boiled egg (optional)
How to prepare it step by step?
Preparation
- Heat the oil in a large pot over medium heat and sauté the onion until translucent, about 3 minutes.
- Add the beef and brown it on all sides, approximately 5 minutes, until it's nicely seared.
- Add the carrot, pumpkin, and shiitake, cooking for 5 minutes until slightly softened.
- Sprinkle the curry powder over the ingredients and mix well to coat evenly.
- Add the soy sauce, sake, and beef broth, bringing to a boil.
- Reduce heat and simmer for 30 minutes, or until vegetables are tender and flavors melded.
- Add the tofu and cook for 5 more minutes, adjusting the seasoning to taste.
- Serve in individual bowls or in a container to share, accompanied by cooked rice.
- Decorate with the boiled egg if desired.
