- 15 ml brown sugar
- 30 ml coconut oil
- Salt to taste

- Heat the coconut oil in a large pot over medium heat.
- Add garlic, ginger, and lemongrass, cooking until fragrant, about 2 minutes.
- Incorporate the red curry paste and red chili paste, cooking until it changes color and releases its aroma.
- Add the beef, frying until well coated with the spice mixture.
- Pour in the coconut milk, adding the bay leaf, turmeric, brown sugar, and salt to taste.
- Cover the pot and let it simmer for about 2 hours, stirring occasionally, until the meat is tender and the sauce has thickened and reduced.
- Remove the bay leaves and serve hot, garnished with fresh herbs if desired.
