Homemade Lamb Biryani with Aromatic Basmati Rice
What does it include?
Ingredients
- 500g lamb cut into pieces
- 500g basmati rice
- 60 ml vegetable oil
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 15 ml fresh ginger, chopped
- 5 ml turmeric powder
- 5 ml cumin powder
- 5 ml ground cardamom
- 5 ml cinnamon powder
- 5 ml black pepper
- 1/10 ml clove powder
- 1/10 ml nutmeg powder
- Salt to taste
- 1 lemon, to squeeze
- 1 bunch fresh cilantro, chopped
- 1 bunch fresh mint, chopped
How to prepare it step by step?
Preparation
- Heat the vegetable oil in a large saucepan over medium-high heat. Sauté the thinly sliced onions until golden and caramelized. Add the minced garlic and fresh ginger, cooking for another minute.
- Add the lamb along with all the spices: turmeric, cumin, cardamom, cinnamon, black pepper, clove powder and nutmeg. Cook until the spices give off their aroma and the lamb is well coated in the mixture.
- Add enough water to completely cover the lamb, season with salt to taste and simmer for an hour or until the meat is very tender.
- Meanwhile, rinse the basmati rice under cold water until the liquid runs completely clear and drain well.
- Once the lamb is tender, add the drained rice to the saucepan and continue cooking everything together for about 20 minutes or until the rice grain is al dente.
- Remove from heat, cover the saucepan tightly and let sit for 10 minutes to integrate flavors.
- Just before serving, squeeze in fresh lime juice and sprinkle generously with chopped cilantro and mint.
