  • 500g lamb cut into pieces
  • 500g basmati rice
  • 60 ml vegetable oil
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 15 ml fresh ginger, chopped
  • 5 ml turmeric powder
  • 5 ml cumin powder
  • 5 ml ground cardamom
  • 5 ml cinnamon powder
  • 5 ml black pepper
  • 1/10 ml clove powder
  • 1/10 ml nutmeg powder
  • Salt to taste
  • 1 lemon, to squeeze
  • 1 bunch fresh cilantro, chopped
  • 1 bunch fresh mint, chopped

How to prepare it step by step?

Preparation

  1. Heat the vegetable oil in a large saucepan over medium-high heat. Sauté the thinly sliced ​​onions until golden and caramelized. Add the minced garlic and fresh ginger, cooking for another minute.
  2. Add the lamb along with all the spices: turmeric, cumin, cardamom, cinnamon, black pepper, clove powder and nutmeg. Cook until the spices give off their aroma and the lamb is well coated in the mixture.
  3. Add enough water to completely cover the lamb, season with salt to taste and simmer for an hour or until the meat is very tender.
  4. Meanwhile, rinse the basmati rice under cold water until the liquid runs completely clear and drain well.
  5. Once the lamb is tender, add the drained rice to the saucepan and continue cooking everything together for about 20 minutes or until the rice grain is al dente.
  6. Remove from heat, cover the saucepan tightly and let sit for 10 minutes to integrate flavors.
  7. Just before serving, squeeze in fresh lime juice and sprinkle generously with chopped cilantro and mint.
