  • 1 kg potatoes, peeled and cubed
  • 150 g fresh spinach
  • 2 cloves garlic, finely chopped
  • 15 ml fresh ginger, grated
  • 5 ml cumin powder
  • 5 ml turmeric powder
  • 5 ml ground black pepper
  • 15 ml fresh cilantro, chopped
  • Salt to taste
  • 18 sheets of filo dough
  • Olive or vegetable oil, for frying

How to prepare it step by step?

Preparation

  1. Boil the potatoes until tender, drain and let cool.
  2. Sauté fresh spinach in a hot skillet until wilted, about 2 minutes.
  3. In a bowl, mix the cooked potatoes, sautéed spinach, garlic, ginger, cumin, turmeric, black pepper, coriander and salt, making sure all the flavors are well integrated.
  4. Lightly moisten the edges of a sheet of filo dough, place a tablespoon of the filling mixture at one end and wrap it forming a triangle, securing the edges well.
  5. Repeat the process until the ingredients are gone.
  6. Heat the oil in a frying pan to 180°C and fry the samosas in batches until golden and crispy, about 4-5 minutes per side.
  7. Drain on absorbent paper and serve hot to enjoy its crunchy texture and flavor full of spices.
