  • 350 ml milk
  • 50 ml double cream
  • 2 free-range eggs
  • 25g sugar
  • grated nutmeg to taste

How to prepare it step by step?

Preparation

  1. Grease a 1 liter tart pan with butter.
  2. Cut the crusts off the bread, spread each slice with butter on one side, and cut it into triangles.
  3. Place a layer of bread in the mold with the greased side up, add a layer of raisins, and sprinkle with a little cinnamon.
  4. Repeat the layers of bread and raisins, sprinkling cinnamon until you end up with a layer of bread.
  5. Gently heat the milk and cream in a saucepan over low heat until just before boiling, without letting it boil.
  6. Crack the eggs into a bowl, add three-quarters of the sugar, and beat until pale.
  7. Add the warm milk and cream mixture, stir well, and strain the mixture into a bowl.
  8. Pour the mixture over the bread layers, sprinkle with nutmeg and the rest of the sugar, and let it rest for 30 minutes.
  9. Preheat the oven to 180°C/Gas 4.
  10. Place the mold in the oven and bake for 30 to 40 minutes, until the cream sets and the top is golden.
