- ½ tsp baking soda
- ¼ tsp
- 1 tsp cinnamon powder
- Optional: 50 g walnuts or raisins

- Preheat the oven to 180°C and prepare a muffin tin with paper liners.
- Grate the carrots and set aside.
- In a large bowl, beat the eggs with the sugar until foamy.
- Add the oil and milk, mixing well.
- Sift together the flour, baking powder, baking soda, salt, and cinnamon, and add them gradually to the wet mixture.
- Incorporate the oats, grated carrot, and walnuts or raisins if desired, mixing gently to combine.
- Fill the molds up to ¾ of their capacity.
- Bake for 20–25 minutes until a toothpick inserted comes out clean.
- Let cool for a few minutes in the pan, then transfer to a wire rack.
- Serve warm or at room temperature, ideal to accompany coffee or tea.
