- Sift together the flour, baking powder, baking soda, salt, and cinnamon, and add them to the wet mixture gradually, mixing until just combined.
- Fold in the grated carrots and walnuts, ensuring even distribution.
- Optionally, fold in raisins or chocolate chips.
- Fill the muffin molds up to ¾ of their capacity.
- Bake for 20–25 minutes until a toothpick inserted comes out clean and the tops are golden brown.
- Let cool for a few minutes in the pan, then transfer to a wire rack to cool completely.
