What does it include?

Ingredients

  • 800 g beef for stew
  • 200 g mushrooms
  • 1 large onion
  • 2 cloves of garlic
  • 300 ml red wine
  • 500 ml meat broth
  • 2 tablespoons olive oil
  • 1 bay leaf
  • Fresh thyme, salt and pepper

How to prepare it step by step?

Preparation

  1. Cut the beef into uniform cubes, season with salt and pepper.
  2. In a large saucepan, heat oil and brown the beef on all sides for 5-6 minutes until golden. Remove and reserve.
  3. Chop the onion and garlic finely and sauté in the same saucepan for 5 minutes until translucent.
  4. Clean and cut the mushrooms into slices, then add to the casserole, sautéing for 3-4 minutes until they release their aroma.
  5. Return the meat to the pan, add bay leaf and thyme. Pour in the red wine, letting it reduce for 5 minutes over medium heat until it thickens slightly.
  6. Add the broth until it partially covers the meat. Cover and simmer over low heat for 1 hour 30 minutes, stirring occasionally. The meat should be tender and the sauce rich.
  7. Check that the meat is tender and the sauce has thickened. Adjust salt and pepper to taste.
  8. Serve hot, accompanied by mashed potatoes or white rice, to enjoy the full depth of flavors.
