- 1 kg chicken, boned and cut into pieces
- 400 ml coconut milk
- 1 kaffir lime, cut in half
- 1 2cm piece of fresh ginger, peeled and chopped
- 1 2cm piece of fresh galangal, peeled and chopped
- 30 ml lemongrass paste
- 1 red pepper, cut into strips
- 5 ml brown sugar
- 5 ml of salt
- 15 ml fish sauce
- Fresh cilantro, to decorate
- Fresh basil, to decorate
How to prepare it step by step?
Preparation
- Place the chicken in a large pot and add enough water to cover it. Bring to a boil, then reduce the heat and simmer for 15 minutes to clean.
- Strain the chicken and reserve the broth. Clean the pot and add the chicken again along with the reserved broth.
- Add the coconut milk, kaffir lime, ginger, galangal, and lemongrass paste to the pot. Cook over medium heat for 30 minutes, until the chicken is tender and flavors meld.
- Add the red pepper, brown sugar, salt, and fish sauce. Let it cook over low heat for 10 more minutes, until the pepper is tender and the flavors are well combined.
- Strain the soup into individual containers, leaving the pepper strips and chicken in each. Garnish with cilantro and fresh basil before serving.
