- 30 ml canola oil
- 4 beef fillets
- 480 ml beef broth
- 30 ml butter
- 2 cloves of garlic, minced
- 1 medium shallot, finely chopped
- 4 ounces mushrooms
- ¼ cup brandy
- ¼ cup heavy cream
- 15 ml Dijon mustard
- 15 ml Worcestershire sauce
- Tabasco
- 15 ml chopped parsley
- 15 ml chopped chives
- salt to taste

How to prepare it step by step?
Preparation
- Heat oil in a 12 skillet over medium-high heat.
- Season the fillets with salt and pepper. Add to the skillet and cook, turning once, until golden brown on both sides and cooked to desired doneness, about 4 to 5 minutes.
- Transfer fillets to a plate and set aside.
- Return skillet to high heat and add broth; cook until reduced to 1/2 cup, about 10 minutes. Pour into a bowl and set aside.
- Reheat the pan and add the butter. Add garlic and shallots, cook, stirring, until softened, about 2 minutes.
- Add the mushrooms, cook, stirring, until they release the liquid, evaporate and begin to brown, about 2 minutes.
- Add the brandy and flambé with a match; cook until the flame goes out.
- Add the reserved broth, cream, Dijon mustard, Worcestershire sauce and hot sauce. Return fillets to pan; cook until sauce thickens and dish is hot, about 4 minutes.
- Transfer steak to serving plates. Add the parsley and chives to the sauce.
- Pour the sauce over the fillets to serve.
