  • 3 gelatin sheets or 6 g powder
  • 200 ml cold whipping cream
  • 80g sugar
  • Juice of 1/2 lemon

  1. Hydrate the gelatin according to directions (in cold water).
  2. Crush the red fruits and strain to obtain a fine puree; add lemon juice.
  3. Heat 2-3 tablespoons of the puree and dissolve the gelatin in it, mix and add to the rest of the puree.
  4. In a cold bowl, whip the cream with half the sugar until soft peaks form.
  5. Add the other half of the sugar to the puree if you prefer it sweeter and mix.
  6. Gently fold 1/3 of the whipped cream into the puree to lighten it, then incorporate the remaining cream with swirling movements to maintain airiness.
  7. Pour into glasses and refrigerate for at least 3 hours to set.
  8. Garnish with whole red berries and mint leaves before serving.
