- 300 g mixed red fruits
- 3 gelatin sheets or 6 g powder
- 200 ml cold whipping cream
- 80g sugar
- Juice of 1/2 lemon

- Hydrate the gelatin according to directions (in cold water).
- Crush the red fruits and strain to obtain a fine puree; add lemon juice.
- Heat 2-3 tablespoons of the puree and dissolve the gelatin in it, mix and add to the rest of the puree.
- In a cold bowl, whip the cream with half the sugar until soft peaks form.
- Add the other half of the sugar to the puree if you prefer it sweeter and mix.
- Gently fold 1/3 of the whipped cream into the puree to lighten it, then incorporate the remaining cream with swirling movements to maintain airiness.
- Pour into glasses and refrigerate for at least 3 hours to set.
- Garnish with whole red berries and mint leaves before serving.
