Ingredients

  • 1 rabbit, chopped
  • 200 g mushrooms
  • 1 onion
  • 2 cloves of garlic
  • 250 ml blonde beer
  • Olive oil, salt, pepper and thyme

How to prepare it step by step?

Preparation

  1. Wash and dry the rabbit pieces, removing excess fat.
  2. Sprinkle the rabbit pieces with salt and pepper on all sides.
  3. Heat a saucepan with olive oil over medium-high heat and brown the rabbit on all sides until it is an even golden brown.
  4. Remove the rabbit and set it aside on a plate.
  5. Finely chop the onion and garlic cloves, and sauté them in the same saucepan until golden and fragrant.
  6. Slice the mushrooms and add them to the casserole, sautéing for 5 minutes until they are tender and have released some of their water.
  7. Add the rabbit pieces back into the pot and slowly pour in the blonde beer, stirring to mix all the flavors.
  8. Add fresh or dried thyme to taste.
  9. Cover the casserole and cook over medium heat for 50 minutes, checking that the meat is tender and juicy.
  10. Uncover the pot and, if necessary, reduce the liquid over high heat for a few minutes until the sauce is the desired consistency.
  11. Serve hot accompanied by mashed potatoes, rustic bread or your favorite garnish.
