- Add fresh or dried thyme to taste.
- Cover the casserole and cook over medium heat for 50 minutes, checking that the meat is tender and juicy.
- Uncover the pot and, if necessary, reduce the liquid over high heat for a few minutes until the sauce is the desired consistency.
