  2. In a pot, mix flour, milk, and cream until dissolved. Add sugar, cinnamon, and lemon peel.
  3. Heat the mixture, stirring constantly until it barely thickens. Remove from heat, discard cinnamon and skin, then quickly mix in the yolks.
  4. Fill the molds up to ¾ of their capacity. Bake at 250°C until the surface is lightly charred, watching for a golden-brown hue.
