- Roll the puff pastry into a cylinder and cut 2 cm discs. Gently flatten each disc and line muffin molds.
- In a pot, mix flour, milk, and cream until dissolved. Add sugar, cinnamon, and lemon peel.
- Heat the mixture, stirring constantly until it barely thickens. Remove from heat, discard cinnamon and skin, then quickly mix in the yolks.
- Fill the molds up to ¾ of their capacity. Bake at 250°C until the surface is lightly charred, watching for a golden-brown hue.
