- Wash and dry the sea bass fillet, then cut it into small cubes.
- In a large bowl, mix the lemon and sour orange juice.
- Add the fish to the bowl and let it marinate for 10 minutes until it changes color.
- Add the red onion, ají limo, cilantro, and red pepper to the bowl.
- Mix well and let sit for another 10 minutes.
- Season with salt to taste just before serving.
