- Cut the fish into small cubes (approximately 1.5 cm).
- Place it in a glass or stainless steel container (never aluminum).
- Squeeze the lemons and pour the juice over the fish until it is completely covered.
- Add a pinch of salt and pepper, stir, and let sit cold for 10-15 minutes. The acid in the lemon will cook the fish.
- Meanwhile, cut the onion into very fine julienne strips and rinse with cold water to soften its flavor.
- After time, slightly drain the excess lemon if there is too much liquid.
- Add the onion, cilantro, and finely chopped chili (if you want spicy).
- Mix gently and let sit for 5 more minutes.
- Serve cold accompanied by toasted corn or cooked sweet potato slices.
