- 110 g egg whites (approx. 3 eggs)
- 30 g white sugar
- 200 g icing sugar
- 125 g almond flour
- Optional: food coloring
- Filling: 100 g chocolate, butter cream or jam
How to prepare it step by step?
Preparation
- Preheat the oven to 150°C and prepare a tray with parchment paper or silicone mat.
- Sift the almond flour together with the icing sugar to avoid lumps.
- Beat the egg whites until stiff and add the white sugar gradually until firm, shiny peaks form.
- If color is desired, add a few drops of coloring to the whipped egg whites and mix gently.
- Incorporate the almond and icing sugar mixture into the egg whites with enveloping movements, taking care not to lower the air.
- Pour the mixture into a pastry bag with a round nozzle and form small circles on the tray.
- Let the macarons rest for 20–30 minutes so that a light crust forms on the surface.
- Bake 15–18 minutes until firm to the touch and the feet have formed.
- Let cool completely before removing from the paper.
- Fill with ganache, buttercream or jam and join two macarons.
- Tip: For a perfect finish, use smooth and uniform trays, and do not open the oven during cooking.
