Exquisite Massaman Beef Curry
What does it include?

- 85 g peanuts
- 400ml can of coconut cream
- 60 ml Massaman curry paste
- 600g stewed beef cut into strips
- 450 g waxy potatoes
- 1 onion cut into thin wedges
- 4 lime leaves
- 1 bunch of cinnamon
- 15 ml tamarind paste
- 15 ml palm or light, soft jaggery
- 15 ml fish sauce
- 1 red chili, seeded and finely chopped, to serve
- jasmine rice to serve
How to prepare it step by step?
Preparation
- Heat the oven to 200C/180C fan/gas 6 and toast the peanuts on a baking tray for 5 minutes until golden and fragrant.
- Once cool, coarsely chop the peanuts. Reduce the oven to 180C/160C fan/gas 4.
- Heat 2 tablespoons of coconut cream in a large saucepan with a lid until it begins to bubble gently.
- Add the curry paste and fry for 1 minute, until the spicy aroma intensifies.
- Add the meat and fry until well covered and sealed, looking for a golden color.
- Add the rest of the coconut with half a can of water, the potatoes, onion, lime leaves, cinnamon, tamarind, sugar, fish sauce and most of the peanuts.
- Bring to a simmer, then cover and cook for 2 hours in the oven until the meat is tender and the potatoes are cooked.
- Sprinkle with sliced chili and the remaining peanuts, then serve straight from the plate with jasmine rice.
