  • 1 pound smoked sausages
  • Salt and pepper to taste

Preparation

  1. Gather all the ingredients and prepare the washed and chopped vegetables.
  2. In a large pot, bring the water to a boil along with the split peas, pork, and bouillon cube.
  3. Reduce the heat to medium-low, cover, and cook for 45 minutes, skimming any foam that forms on the surface.
  4. Remove the pork, bone it, and cut into thin slices, reserving for later.
  5. Add the celery, carrots, potato, onion, leek, and celeriac to the soup.
  6. Bring back to a boil, reduce heat to medium-low, and cook uncovered for 30 minutes, adding water if necessary to prevent sticking.
  7. Add the sausages during the last 15 minutes of cooking.
  8. When the vegetables are tender, remove the meats and cut them into thin slices.
  9. If you want a smoother texture, blend the soup with a hand blender until you reach the desired consistency.
  10. Add the meat slices again, season with salt and pepper to taste, and mix well before serving.
