How to prepare it step by step?

- Crush the cookies until you obtain fine crumbs and mix with the melted butter until forming a homogeneous mixture.
- Press the mixture into the base of a removable mold (approximately 20 cm) forming a compact layer. Refrigerate for 20 minutes.
- Hydrate the gelatin in cold water while you prepare the cream.
- Whip the cream until soft peaks form and set aside in the refrigerator.
- Beat the mascarpone with the icing sugar until you obtain a smooth cream without lumps.
- Incorporate the whipped cream into the mascarpone mixture with enveloping movements to maintain volume.
- Heat 2 tablespoons of red fruit puree (blending some fruits) and dissolve the hydrated gelatin in it, stirring until integrated. Let it cool slightly.
- Add the gelatin and fruit mixture to the mascarpone cream and mix quickly to homogenize, ensuring the cream stabilizes.
- Pour the cream over the biscuit base and smooth the surface with a spatula.
- Refrigerate for at least 4 hours until completely set.
- Before serving, distribute fresh red berries on top and brush with a little diluted jam to add shine if desired.
