Preparation

  1. Boil water in a large saucepan and add 250 ml of cold water along with the udon noodles to check the cooking. Cook for 2 minutes if fresh or frozen, or 5–6 minutes if dry, until al dente. Drain and reserve.
  2. Heat 1 tablespoon of oil in a pan and sauté the onion and cabbage for 5 minutes until softened. Add the shiitake and part of the chives, and cook for 1 more minute.
  3. Add the remaining sesame oil and the noodles. If they are cold, reheat them briefly before adding the sauce. Pour in mirin, soy sauce, sugar, and Worcestershire sauce. Sauté for 2-3 minutes until everything is well combined and the noodles are hot and slightly sticky.
  4. Serve and decorate with the remaining chives.
