How to prepare it step by step?

  1. Preheat the oven to 180°C. Place the shortcrust pastry in a tart pan and prick the base with a fork to prevent it from puffing up during cooking. Let it rest in the refrigerator while you prepare the filling.
  2. Finely chop the onion and sauté in a pan with a little oil for about 5 minutes, until translucent and soft. Add the fresh spinach and cook over medium heat for 3-4 minutes until it reduces and releases its water. Remove from heat and let cool slightly.
  3. In a large bowl, beat the 3 eggs together with the cooking cream. Add salt, pepper, and a pinch of nutmeg to taste. This mixture will be the liquid base for the filling.
  4. Distribute the spinach and sautéed onion over the shortcrust pastry base. Crumble the goat cheese and sprinkle it evenly on top of the vegetables.
  5. Pour the egg and cream mixture over the spinach and cheese, ensuring everything is well covered.
  6. Bake the quiche for 30-35 minutes, or until the center is set and the top is lightly browned. Test for doneness by inserting a toothpick into the center; if it comes out clean, it's ready.
  7. Let the quiche rest for 5 minutes before slicing and serving. This allows it to set and ensures clean cuts.
