How to prepare it step by step?

Preparation

  1. Sift flour and salt into a large mixing bowl.
  2. Pass the egg yolk through a fine sieve into the flour.
  3. Mix in raw egg.
  4. Beat in butter 1 tablespoon at a time until fully incorporated.
  5. Knead the dough on a floured surface until smooth and elastic, about 5 minutes.
  6. Wrap the dough in wax paper and refrigerate for at least 30 minutes.
  7. In a skillet over medium heat, melt 2 tablespoons butter.
  8. Sauté onion and kohlrabi until onion is soft and translucent, about 5 minutes.
  9. Pass the vegetables and meat through a meat grinder twice or finely chop them.
  10. Melt the remaining 4 tablespoons butter and add the meat mixture.
  11. Cook over low heat, stirring occasionally, until mixture is thick and flavorful, about 10 minutes.
  12. Remove from heat, let cool slightly, then add 1 egg, salt, and pepper.
  13. Preheat oven to 350°F.
  14. Roll out the dough to a 13x8 (1/8 thick) rectangle.
  15. Place the filling in the center of the rectangle, leaving a 1-inch margin.
  16. Brush the long sides with cold water and fold them over, covering the filling.
  17. Brush the short ends with cold water and fold them closed.
  18. Place dough seam side down on a baking sheet.
  19. Brush the top with the remaining beaten egg.
  20. Bake until golden brown, about 30 minutes.
  21. Cut the dough into 1.5 long pieces and serve as an appetizer or with soup.
