- 1 kilo of beef
- 30 g plain flour
- 30 ml rapeseed oil
- 200 ml red wine
- 400 ml meat broth
- 1 onion finely chopped
- 2 carrots chopped
- 3 sprigs of thyme
- 30 ml mustard
- 2 free-range egg yolks
- 400 g puff pastry
- 300 g green beans
- 25g butter
- pinch of salt
- pinch of pepper
How to prepare it step by step?
Preparation
- Preheat the oven to 150°C/300°F/Gas 2.
- Mix the meat and flour in a bowl with a pinch of salt and black pepper.
- Heat a large saucepan and add half the rapeseed oil.
- Place enough meat in the pan to cover the bottom and fry until browned on each side, looking for an even golden color.
- Reserve the meat and repeat the process with the rest of the oil and meat.
- Return the meat to the pan, add the wine and cook until the liquid is reduced by half, aiming for a reduction of one third of the initial volume.
- Add the broth, onion, carrots, thyme and mustard, and season with salt and pepper. Cover the pan and bake for two hours, stirring occasionally to ensure even cooking.
- Remove from the oven, adjust the seasoning and let cool. Eliminate the thyme.
- Preheat the oven to 200°C/400°F/Gas 6 when the meat is cold.
- Transfer the meat to a pie plate, paint the edge with beaten egg yolks and place the dough on top.
- Brush the surface of the dough with beaten egg, trim off the excess and bake for 30 minutes or until golden and cooked through, looking for a bright golden color.
- For the green beans, boil salted water and cook for 4-5 minutes until tender but firm.
- Drain and mix with butter, season with black pepper.
- Serve with a slice of cake and green beans on the side.
