- Cut the loin meat into thick strips and season with salt and pepper.
- In a large skillet, heat the corn oil over high heat until it shimmers.
- Add the meat strips and fry them until golden brown, about 3-4 minutes, then set aside.
- In the same pan, add the chopped onions and garlic, and sauté until translucent and fragrant, about 2 minutes.
- Add the peppers cut into strips and sauté together with the onions until they soften, about 3 minutes.
- Return the meat to the pan and mix well with the vegetables.
- Add the soy sauce, wine vinegar, and sugar, mixing until the ingredients are well combined and the sauce has reduced to a glossy consistency, about 5 minutes.
- Serve the lomo saltado over hot white rice or accompanied by French fries if you wish.
