Lamb Biriyani at Dhaba

Ingredients
- 500 g chopped lamb
- 480 ml basmati rice
- 1 large onion chopped
- 3 cloves crushed garlic
- 10 ml grated ginger
- 10 ml ground cumin
- 5 ml turmeric powder
- 5 ml paprika
- 5 ml ground coriander
- 5 ml cardamom powder
- 5 ml ground cloves
- 5 ml cinnamon powder
- 1 sprig fresh thyme
- 1 laurel twig
- 5 ml ground black pepper
- Salt to taste
- 960 ml chicken broth
- 1 grated lemon
- 1/480 ml slivered almonds
- 1/480 ml black raisins
- Olive oil
- Chopped fresh coriander for garnish
How to prepare it step by step?
Preparation
- In a large frying pan, heat olive oil and sauté the onion until golden.
- Add the garlic, ginger and spices (cumin, turmeric, paprika, coriander, cardamom, cloves and cinnamon), cook for a couple of minutes.
- Add the lamb and cook until golden brown, season with salt and pepper.
- Add the thyme, bay leaf, and chicken stock, bring to the boil and then reduce to a simmer, cooking until the lamb is tender.
- Cook the basmati rice in salted water and drain.
- In an oven at 180°C, mix layers of rice and lamb, sprinkle almonds and raisins on top.
- Bake covered with aluminum foil for 20 minutes, then remove the foil and cook for another 10 minutes.
- Serve sprinkled with fresh coriander and lemon zest.
