Indian Lamb Biryani - traditional recipe

- 1 kg lamb in pieces (preferably thigh)
- 480 ml basmati rice
- 45 ml vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, crushed
- 5 ml grated ginger
- 5 ml ground cumin
- 5 ml turmeric powder
- 5 ml cinnamon powder
- 5 ml ground cardamom
- 5 ml ground black pepper
- 5 ml ground coriander
- 1 cinnamon stick
- 4 cloves
- 1/960 ml raisins
- 1/960 ml almonds, chopped
- 1 lemon, sliced
- 1 bunch of fresh mint
- 1 bunch fresh cilantro, chopped
- Salt to taste

How to prepare it step by step?
Preparation
- In a large pot, heat the vegetable oil over medium-high heat and sauté the onion until golden.
- Add the garlic, ginger, cumin, turmeric, cinnamon, cardamom, black pepper, ground coriander, cinnamon stick, cloves, and salt to taste. Cook for a few minutes until the aromas are released.
- Add the lamb and sauté until golden brown all over.
- Add the raisins and almonds. Cover with enough water to submerge the lamb, add the lemon slices, and simmer for 1 hour until the lamb is tender.
- Rinse the basmati rice under cold water until the water runs clear.
- In a separate pot, boil water with a pinch of salt. Add the rice and cook until al dente. Drain the rice and reserve.
- Grease a baking container and place a layer of rice on the bottom. Cover with a layer of the cooked lamb, sprinkle with a little mint and fresh cilantro, and repeat the layers until you finish the ingredients.
- Cover the container with aluminum foil and bake at 180°C for 30 minutes.
- Remove from the oven, let rest for 10 minutes before serving sprinkled with mint and fresh cilantro.
