Greek Style Lamb Souvlaki with Lemon
What does it include?
Ingredients
- 750 g cubed leg of lamb
- 2 cloves of garlic, minced
- 1 lemon (zest and juice)
- 60 ml olive oil
- 1 tablespoon fresh or dried dill
- 1 teaspoon sea salt
- Black pepper to taste
- Wooden or metal skewers
- Pita bread to serve
- Optional tzatziki
- Optional Greek salad
How to prepare it step by step?
Preparation
- Place the garlic in a mortar with the sea salt and crush it until you obtain a paste.
- Mix the olive oil, lemon juice, lemon zest and dill in a bowl.
- Add the crushed garlic to the mixture and stir until combined.
- Add the lamb cubes and mix so that all the meat is covered with the marinade.
- Cover the bowl with film or an airtight lid and place in the refrigerator for at least 2 hours. For a more intense flavor, marinate overnight.
- Remove the lamb from the refrigerator 30 minutes before cooking.
- Thread the lamb cubes onto previously soaked skewers if they are wooden.
- Heat a grill, griddle or barbecue over high heat.
- Place the skewers on the grill and cook 2 to 3 minutes on each side, until golden and juicy. Baste the skewers occasionally with a little marinade.
- Heat the pita bread lightly on the grill or in a frying pan.
- Serve the skewers inside the hot pita bread.
- Add Greek salad or tzatziki if desired.
