  • 2 medium potatoes
  • 1 small yucca
  • 2 carrots
  • 1 onion
  • 2 cloves of garlic
  • 1 liter of fish broth or water
  • 1 bay leaf
  • Coriander, salt and pepper

How to prepare it step by step?

Preparation

  1. Peel and cut the potatoes, cassava, and carrots into regular pieces. Chop the onion and garlic.
  2. In a large pot, heat 1 tablespoon of oil and sauté the onion for 4-5 minutes until translucent. Add garlic and sauté for 1 minute until fragrant.
  3. Add the hardest vegetables (cassava and potatoes) and the broth. Add the bay leaf and bring to a boil.
  4. Reduce heat and cook, covered, for 15-20 minutes until the vegetables are tender.
  5. Add the carrots and cook for 5 more minutes. Add the fish in pieces and cook for 5-8 minutes until the fish is cooked through but still firm.
  6. Adjust salt and pepper to taste. Add chopped cilantro at the end.
  7. Serve hot with limes or lemon on the side. Serve with white rice if desired.
