Ingredients
- 2 medium eggplants (400 g)
- 100 g breadcrumbs
- 50 g grated parmesan cheese
- 2 large eggs
- 50 g wheat flour
- Salt and pepper to taste
- 2 tbsp olive oil (30 ml)
- Optional: garlic powder or dried herbs for seasoning
How to prepare it step by step?
Preparation
- Wash the eggplants and cut them into slices approximately 1 cm thick.
- Dry the slices with absorbent paper to ensure a crispy coating.
- Prepare three containers: one with flour, another with beaten eggs, and another with breadcrumb and Parmesan mixture.
- Dip each slice first in flour, then in egg, and finally in the breadcrumb and cheese mixture, pressing lightly to adhere.
- Heat olive oil in a frying pan over medium heat or preheat the oven to 200°C for baking.
- Fry the slices in hot oil until golden and crispy, about 3-4 minutes per side, or bake for 15–20 minutes until golden.
- Turn the slices halfway through cooking to ensure even browning.
- Serve hot as a main dish or side, accompanied by a fresh salad or your favorite sauce.
